Homemade Rosella Cordial in Barry’s Backyard!
There’s nothing better than turning homegrown harvests into something delicious — and today I made a small but mighty batch of rosella cordial straight from the garden!
Here’s how I did it:
Picked about 2 cups of rosella ‘petals’ (the fleshy calyxes)
Added 1/4 cup white sugar and 1/4 cup brown sugar for that rich, balanced sweetness
Added a squeeze of fresh lemon juice to brighten it up and bring out that tangy flavour
Brought it all to a gentle boil for 5 minutes, then turned off the heat and let it steep like a tea
The result? A deep red, tangy, sweet syrup with a citrusy kick — perfect with cold soda water, a splash in iced tea, or even in a sneaky cocktail or two!
Rosella’s not just a pretty plant — it’s one of the true heroes of the tropical garden.
